Carrot cake results

I had what I thought was a pretty good piece of carrot cake last week from HEB. But I threw together this carrot mini-bundt cake yesterday and it is so much better that I'll have a hard time going back.





Neither Dana nor I are very good at icing. No patience. But we get the job done.

This cake has carrot, raisin, apple sauce, and mashed up pineapple in it so it is very moist and not at all dense. Lots of taste.

Looks excellent! I don't make a lot of cake for boring health reasons, but when I do I'm always astonished at how light years better it is than anything you can buy.
