It happens all the time

We had some cherry pie that I'd bought. HEB makes a decent cherry pie and sells half a pie for probably too much money. I don't check the price but I do eat the pie making it last four or five servings.

Dana said, 'Hey, you need to get come vanilla ice cream' obviously meaning I need to buy some before the pie is gone so I can have it with the pie. Too late.

But I did buy ice cream. Hers and mine. Both vanilla (she's lactose intolerant so Nada Moo).

And no pie. I was going to buy a small spice cake that HEB always has in their flat frig near the front door. But as I frequently do, 'that's dumb, I've got the makings at home and can do at least as well with stuff I've already paid for'.

Hence tonight's desert:

A joy for me is to have stuff on hand to throw together and make cake or cookies or bread without having to go the to the store. I can nearly always do that only occasionally having to grab some butter milk or something like that.

This was an entirely stuff on hand cake.

And, I have vanilla ice cream to go with it. Amazing how that works out.

For years buttermilk wasn't available in NZ at all, and it was expensive when we finally started making it, so I learned that you can make your own by adding 1 Tbsp of lemon juice or vinegar to 1 cup milk. Good to know if you need it in a hurry.

I bet your buttermilk isn't $5.30 a litre [quart] though. You'd never guess we were the largest dairy exporter in the world. Although actually that's the problem - farmers can get high prices overseas so they're not inclined to offer the locals a discount. This is what happens when you remove agricultural subsidies. It made our farming sector one of the most efficient in the world, but it really hit us in the pocket.
