I have increasingly treasured my routine and disruptions of this time of year don't much excite me. The sous vide I bought us is getting use:

Sous vide and then seared on the charcoal fire.

It is a ribeye roast. There were two of them next to each other. One was $45, one was over a hundred bucks. Different quality of meat. The expensive one was Prime or something. There are four or five or six grades of meat now days and I just get annoyed. This is, I think, a good test of the sous vide system. If I can buy less expensive meat and it still comes out with flavor and tenderness the investment will be more than proven. I did buy a vacuum sealer today that will come in a week or so. It is possible but not as good to do without and, of course, the sealer has other uses. I think it slices and dices and there's more.

But I'm ready for the Ranch tomorrow and pickleball the next day and back to the normal schedule from there. New Year's eve is pretty easy for me to ignore. I'm more the 1st day sunrise if I want to play at all. Midnight is more than two hours after my bedtime.

It looks like we're going to finish out the year in mostly the black financially. We had to take money out of the IRA during they year so it is not perfect. Maybe next year will be. I'm tracking things well and will clean up the tracking with a new configuration of Tiller, the financial program, this year. But I always know where everything is going and print off an P&L for Dana every month.
