Dana loves onion soup and Panera has it most of the time. But either it has gotten a lot more expensive there or I've become more price sensitive or both. The thought occurred to me 'how hard can this be?'. The answer is 'depends on how good you want it to be'. Onion soup is some caramelized onions in beef broth. I can caramelize the hell out of onions with my iron skillet but buying broth is like getting the stuff from Panera anyway. The only answer is to make it all from scratch, something I'd never done. Turns out the only thing required is bones, carrots, onion, celery, water and time. I roasted the bones for a while and then put it all in my crock pot for 36 hours. Not at all expensive and now I'm drinking bone broth and V-8. My body does not know what to think.

Now I know what I'm doing it is actually easy, the only commodity that is expensive is time. Meanwhile I'll freeze these and be ready to make some soup.
