I've got projects today, things I've been putting off. First is working to find a way to divest from the company that acquired mine. Technically they owe me money but they have lost so much business they are barely open and I've been able to write money off my taxes every year as a percentage of their losses comes is mine. I'm fairly sure that they will never make money but I'd rather not chance that I'll end up having to pay a percentage if they do. And I'd just as soon be shed of them. A toxic owner (actually the owner's wife is the only toxic piece but she owns 51 percent and thinks she is the goddesses answer to fixing the world). I've engaged the same lawyer that set up the KindPool company. He's reasonably priced and incentivized to help.
Then I'm dealing with our long term care insurance. They have let us know (last July) that they will double our premium over the next three years. They took the first step this month with a 25% increase. It is for anyone who has Allianz. They are not allowed to target people. There are a couple of things I can do to ease the cost including moving the payments to annual and withdrawing that from our IRA (which is, after all, what it exists for). This would also make a big difference in our monthly cash flow.
And I already did the first chore with the lawyer and another (making a check list for Dana - Covid vaccine and new driver's license). The only other thing is putting my suitcase in the attic and getting another cup of coffee. Then I will have put off the Allianz thing as long as I can.

Two things I'll do differently next time (I've got half a jar of pizza sauce left):
1 - Read a great discussion of mozzarella. I used the wrong type (soft) for this and it was a little squishy. Next time I'll buy the U.S. version which has been dried out.
2 - Cook it in the regular oven. I cooked it in the counter top oven and I think It didn't do as well. I need to cook the bottom more without burning the top and I can do that with my baking stone in the big oven.
But for crappy pizza this was really good. The trick that King Arthur has is that you cover the entire pizza with mozzarella THEN put on the pizza sauce and use very little sauce. Then pepperoni and whatever you want and then a little more mozzarella. I added parmesan too but might fresh grate some asiago next time.
It was fun to do and so nice to have the right cast iron skillet to use (thank you Reddit).
