I suck at cake decoration having made all of maybe six cakes in my life.  Fortunately not many people remember much about the quality of the decoration once they have a fork full of cake.

They are very moist.  I sliced off the top of one, put it in a bowl, and added some icing for the birthday girl a day in advance of her big day.  It is amazing cake.  From the recipe I cut the raisins and rum and substituted, pecan pieces in place of walnuts.  For some reason both Dana and I get a reaction to walnuts on our tongues.  Turned out to be a pretty good substitution.  I roasted the walnuts and they are barely there in taste but just enough to add a different flavor.  Turned out I didn't have ginger powder but I substituted All Spice.  Made no difference at all.

The frosting is butter, cream cheese and powdered sugar with a dash of salt and vanilla.  One of the site comments said it was too sweet.  Really?  What a surprise.  Four cups of sugar is sweet?  I think it is about right.


Pix the slices tomorrow.  I'm NOT buying 65 candles.
