But this week is ribs:

I used to cook these a lot. I've known how to cook ribs all my life. I don't remember when I didn't know how. My father used a different sauce but they were good.
This is a Texas tomato sauce and is what my wife likes so it is what I make now. I'm easy. It has been nearly two years since I've cooked ribs and I'm out of practice. They came out OK but there was a little anxiety. They cost more now so the stakes are higher.
We'll have good ribs for Thanksgiving and maybe next week we'll have turkey.

It is really all in having a good smoker and getting some distance between fire and ribs. And patience. It used to involve lots of beer for me. I had to relearn when I stopped (for the most part) drinking. But it does seem to work better while drinking beer.
Ribs are easier than brisket as they have more fat and don't dry out.
