Birthday Cake

bill_schubertToday is my wife's birthday. Dana is off getting a massage from this great LMT (and ex physical therapist) I found. Fingers crossed she likes it. Dana was an LMT when I met her and is hard to please so I'm hoping. I love the one she's seeing today but I'm kind of a massage slut. Low standards, pretty easy to please.
She said something about cake last night so I threw together a spice cake with shredded carrot (so I guess it is technically a carrot cake). I was making the icing and put a lot less sugar in it. I also used some vegan cream cheese since Dana is a little lactose intolerant and occasionally reacts to the icing.
The results are kind of visually sad (it's a 6 inch double decker) but tastes excellent:
I could use some decorating training. But the icing is not as sugary as it sometimes is and I've got the spice thing down pretty good using Sally's Baking Addiction.
We've got a steak and the stuff that goes with it so will likely just stay here tonight.
It is all I've got on the schedule today other than retrieving the trash can.
Tomorrow is a big Pickleball "Mixer" for charity I'm going to. First time I've ever done such so it will be interesting. 60 or so people. Fortunately I already know a few of them.
