Remember that picture of a couple of days ago when it was 32 (aka — 0)degrees?  It is nearly 80 (27 degrees) today.  


But I've got cake, so who cares.  Having found what turned out to be a good recipe, I did not have to figure out the scaling.  Which turned out to be a good thing.  It is only a cup and two tablespoons of flour.  And just a 1/8 t of salt.  I could have used miniature measuring spoons.

I've never made a cake before and it was far better than box cake.  No chemicals and I could really tell.  It turned out moist (I think that was just luck) and the icing was good too.  Never made that before either.  


Other than buttermilk (which I could have faked with the Baker's power butter milk substitute or vinegar and milk) I had everything on hand to make this so that made it more fun.  And we don't have the commitment of a whole cake with just the two of us.  I've got a second 6" pan but now that I've done it I don't think I even want to make a two layer cake.

A baker's secret: the very tenderest cakes are produced by using water for the liquid instead of milk (absence of proteins, which can toughen the end product, is why this works.) Might want to add a teensy bit more fat to the mix at the point you're working with the fats, but I do mean teensy, if you omit milk: don't get carried away. Everything else is pretty much the same although you'll want to eat your cake all gone, or freeze what you don't eat right away, because it will go dry and stale. Might want to consider an extra egg yolk.

That looks delicious! And I like the idea of a tiny cake. We eat cakes and pies till they are gone — no self control — so a small one would be self limiting!

That looks great! I say one serving is a quarter of a cake. :)

You'll want to make two layers when you're able to have other people over to the house for dinner.

Right now I need to hunt down where the 6" pans are. There are three of them somewhere in the house.

Yay! I'm thrilled you've discovered the glory of from scratch cake or, as I refer to it, cake. IMO the existence of cake mix, plus shows like GBBO that make everything look difficult for the sake of drama, just leads people to think baking must be far more difficult than it actually is. And the result is in another universe from the commercial versions.

It is a cute cake. And the second piece I ate was better than the first. Such a difference from the box. Very fun.
