Soup and bread
Feb. 7th, 2022 12:03I'd not made onion soup (Dana's favorite) in a long time. Last time it was mediocre so I was skittish about it. But we bought some Panera's Onion and it was ridiculously expensive so I have decided to master the recipe. My first shot at it was a cheat on the beef stock side of things. I just made it with some bone broth from HEB and some Better than Bullion. Pro: very low fat. Con: very low fat.
Then I cooked the onions. I've screwed this up before so I went into it with some more patience and intent. I've gotten where I love my iron skillet again so that is what I used cooking a heaping pile of chopped up onions (various types) for probably 45 minutes until they were perfect. Then simmered them in the broth for a while longer. Voila. First hurtle cleared. Now on to buy some bones and make the good stuff.
Oh, yeah, and I made my best Asiago NYT no knead bread I've ever made:

Date: 2022-02-07 23:00 (UTC)Yeah, onions are a pain. You can't shortcut the endless cooking if you want a decent result. But what a result it is! So much flavour from a vegetable most people just think of as giving an assist to the proper ones.
